We ♥ Biscotti.

When it comes to managing a {larger than average} family, I have learned two things.

 

One: getting two babies to nap at the same time should be awarded with a medal.

And two:  Before you put your babies to sleep, utilize your time efficiently so you can have a time slot alloted for fun, happy activities like crafting with the older girls, taking time out for tea or trying out a new recipe in the kitchen. …  in other words, do. not. procrastinate or waste time. The early bird gets the worm. And the organized momma gets some down time. Get dinner prep out of the way, homeschooling, laundry started & cleaning. etc., … and then {hopefully} you will some quiet time.

I stumbled across this great recipe on pinterest and tried it out to see if we could modify it for one of our scheduled Valentine’s treats for our Family Valentine’s day party …

It worked.
And it was delicious.
In fact, it was so good, that I ended up doubling the batch and will probably have to make another before we set our table on Thursday with love-inspired-heart-shaped goodies.

May I share it with you? I have to admit, this was my first time making biscotti so I was thrilled that 1) it worked and 2) everyone in the family loved them.

{Homemade with Love} Valentine’s Day Biscotti

All you need is:

a cup of flour

(we milled our flour – love this thing!)

 

tablespoon of butter

two eggs

2/3 cup of sugar

dash of salt if you wish

teaspoon of vanilla

[the recipe was so simple I have actually memorized it]

 

Mix ingredients. You can add whatever you want- raisins, almonds, lemon … I added cranberries for this batch since they were red.

Pour into a greased loaf tin …

 

Bake at 375 for 1/2 an hour …  When it’s cooled, slice the loaf and spread out on a buttered pan. Pop it back into the oven for 5-8 minutes per side.

Meanwhile, to fancy it up for our Valentine’s party, I melted white chocolate in my redneck double boiler.

Drizzle white chocolate over your biscotti …

and allow your two your old, who just woke up from their nap just as I finished, to help with the administering of red and pink sprinkles.

 

And that is it…

 

 

 

I did make the Man of the House his own batch, as well.  {Almond and white chocolate}

Annie lovely post! i’ll have to try a version of this – thanks for sharing! and yes, very much agree that two babies napping at ONCE is worthy of a medal. I don’t have a large family — but two of mine came together!! 🙂

Gillian’s Mom, Brenda Gillian, those look amazing!!! I know Amy James makes her own biscotti too!! I will have to try it. Btw, Lovelyn did a great job of decorating!!! And I’m glad that the Man of the House did not have to eat the pink biscotti 🙂
