Petra Lea Oh man…it’s times like this I SO resent my mom for moving us from Toronto to England….with baby Ava, this sounds like SO much fun!

Kate, the Cupcake Queen.

This week, we have been blessed with the amazing visit of Kate Eardley, our dear friend all the way from England! We first met in Africa several years ago through the Salvation Army and have since kept in touch … in fact, many of you may remember her mom, who we fondly called Nanny Elaine when she lived here last year for a time. 

Poor Kate though. She’s a young girl in her 20s, no kids and lives a very awesome life of travelling around the world with World Vision. She just returned from Uganda and now here she is, stuck in the Gauthier home of Pinkness and surrounded by coughing children, barking dogs and early bedtimes. 

 

But so far, she’s held up okay! Today she wowed us all with her cupcake-awesomeness …. back home, she’s dubbed the Cupcake Queen. I think we shall give her the same title. 

 

The start of a very long process in cupcake making … when you bake with three kids, it does take a while. Not to mention, we, er, SHE made sugar cookies, icing, banana muffins ANNNND cupcakes all in one day!

Aren’t they lovely?! And ever so tasty!

Kate used this Wilton recipe for her icing – I’m going to use it next time, as well!

 

 

Ingredients:

  • 1/2 cup solid vegetable shortening
  • 1/2 cup (1 stick) butter or margarine softened
  • 1 teaspoon clear vanilla extract
  • 4 cups sifted confectioners’ sugar (approximately 1 lb.)
  • 2 tablespoons milk

Tanya I always use the Wilton recipe too…it’s no fail!! We did snowflake cupcakes for my pumpkin-girls 1st bday and the icing did not disappoint! Cute pics 🙂

And Sherri, those are silicone cupcake holders – they hold their own shape and don’t need to go inside a pan! Kinda handy, eh? 🙂

Sherri Smith Love that they are hear-shaped. Are the cupcake forms hard, or do they just liners that need to be inside a pan to keep shape while cooking? I really like that they are different sizes too.

With a name like Lillian – which means beautiful flower –  I knew this sweet little baby was going to be adorable … but wow …. so. much. cuteness. with Lillian’s session!

She was the perfect little newborn and was so sleepy for me. Thanks, guys, for making the drive to Orangeville for your little one’s photos …!

I’ve been a bit quiet on the blog this weekend … we had Lacey’s sixth birthday party and we also have a guest here from England this week! So lots of fun and lovely times happening in the Gauthier home! But do not fear – I am still working on client orders and proofing and finding time to proof in the evening, accompanied with Jane Austen’s love stories on film. 🙂 (How perfect is that?)

Tonight, I tucked a little five year old girl into bed. Tomorrow, she will wake up as a beautiful six year old. 

Tomorrow is my oldest daughter, Lacey’s, birthday!

Besides the  fact that I can barely believe it myself, I also feel so blessed to have this beautiful little person in my life for the past six years. 

Lacey EllaRose Dale Gauthier …

 

(I know, what a name, eh? I’m not sure what I was thinking – maybe that I would only have one girl and had to cram all the special girl names into one child’s title?)

 

My little princess. My little kindred spirit. The one who watches Anne of Green Gables with me,  loves the colour pink,  adores fairy tales and happy endings and has a spirit that is so very, very sensitive (which can also means lots of tears!)… she is gentle and kind to her sisters (for the most part!) …  between growing up and becoming such a great helper for mommy, she’s still such a sweet little girl who just wants to dance with her daddy when he gets home from work and snuggle up with her mommy late at night. I cannot imagine my life without her and I honestly do feel so blessed to call her my own. 

 

Tomorrow, we are taking her to see Little House on the Prairie downtown Toronto for her birthday – I can’t wait!  This is a show we watch together and love … so I think tomorrow will be a very special day for Lacey.
