Let the applause break forth. Let the Housewives celebrate. This momma has one more ‘accomplishment’ under her belt.
My BFF, Leanne, and I successfully made our very first batch of homemade strawberry jam …!!!

 

We took the littles out on Friday morning to a local strawberry farm and picked $51 worth of gorgeous, juicy fresh strawberries from the fields… the kids had a blast – and a great morning snack, too!

 

Strawberry picking in a field was actually my first official job way back when (I think I was 11 years old) and I absolutely hated it. It was so boring and hot. Amazing how now it’s a delightful outing for me!

Lacey and her awesome best friend, Dawson … Lacey looks so grown up in this image. Shortly afterwards, we discovered her *FIRST* wiggly tooth. My heart is breaking. She is so big now!

The kids were pretty helpful in picking the berries … until they ate a few a lot and spilled 1/2 on the way out to the car …

Thanks to the wisdom of Leanne, we decided to make jam the same day we picked the berries. Apparently, that’s the best way. So we picked, hulled, boiled, stirred and canned.

… and two hours & fifteen lbs. of sugar later  (not literally – I think), we looked at each other and smiled and high fived with sticky strawberry-jam fingers … we did it!

I must say, we were pretty darn proud of ourselves… (and we have to admit, we did call my mom and my gramma for some advice! I was so nervous we were going to mess it up!)

 

So now – it’s strawberry season … do you want the jam recipe? We used the certo/cooked jam recipe, although Leanne did try the freezer jam at the end, as well (I opted for cooked jam only, as that’s how my momma did it). 

 

Recipe for Strawberry Fun!

1) Gather some fun-lovin’ kids and head to the local strawberry farm.

2) Make sure you wear red. And get a coffee on the way.

3) Pick a berry, eat a berry, pick two berries, eat a berry (No, I did NOT do this …)

4) Fill your baskets to the brim.

5) Pay. 🙂 

6) Drive home quickly with the windows down,  singing a lovely summer tune. 

7)  Wash your jars & lids in hot, soapy water. Sterilize the jars. 

8 ) Stem and crush 3 3/4 cups of berries – this is a great step for kids to help! Lyla LOVED crushing the berries.

9) Measure out the crushed berries and add to a large pot, with 1/4 cup of lemon juice.

10) Measure 7 cups of sugar (yes, I know – scary) and add to the pot. 

11) Put the pot over high heat and bring to a full roiling boil, boil for one minute, stirring constantly. 

12) Take the pot off the stove and stir in the Certo liquid. 

13) Skim off the foam (if you want).

14) Let it set for quite a while (till you can see that the jam is settled and not going to pour out of the jar).

15) Pour in a bit of vinegar over the jam, letting the vinegar touch all of the jam at the top of the jar – this is in place of the wax seal. It’s a trick my mom and gramma taught us this weekend. Roll the vinegar around in the jar and then dump it out and screw on the lid.

16. Voila – done! Yummy, scrumptious homemade jam!

Now, go make some homemade scones or bread and slather that delicious jam on top and ENJOY your summer berry treat!

Tara YEAH Gillian! I spent so many summers with my mom and grandma making strawberry jam, I can remember my hands being stained red! Can’t wait to continue the tradition with Grace and Lily :).

We did the exact same thing after leaving the berry patch yesterday…I think I hulled my weight in strawberries yesterday!

A {mad} dash of crazy cows & tea time treats…

* Please note – slight dramatization for this post and this post only.*

This session started like most of my sessions … all smiles, happy faces & greetings of “how are you? Nice to meet you!” etc.

 We arrived at the farm where the session was to take place, smiled as we looked around the glorious country side, sighed a big sigh and listened to the sweet birds sing. How nice it was to get away from the city, one of the family members mentioned. Yes, indeed. Country life is the best, right?

Then … the barn doors opened and out came …  the cows  – a large, restless herd of black cows … 

“Oh, don’t worry about them,” said the sweet older farmer, as he sat on his front porch, the least bit worried. “They won’t hurt you – just stay away from that big one – the bull.”

The bull?! A herd of cows AND a bull? Seriously?! I looked at Dana (my client and winner of the most easy going momma so far!) and shrugged.

“You afraid of cows??” I asked, trying to look easy, calm, cool and collected. I mean, I’m not afraid of cows, but a bull in the mix kinda changes things.

“Naww, it’s all good. We wanted photos that take us back to our rural roots,” she smiled, politely, and took her little son’s hand tightly in hers, as she eyed the black cloud of cows in the distance.

She smiled. I smiled. Let’s do it, we agreed.

So off we went … opened the gate and the six of us began to cross through the cow field … while the herd of 50 black Angus beef cows eyed us up suspiciously from about 30 feet away … one of the cows snorted … a puff of cow steam blasted from his wet nose. Snot dripped from his nostrils. His eyes flared red and I swear he pawed at the dusty ground.

Okay, so that was the boss. The bull. The head honcho. The one to run from.  We hustled a bit faster. 

We walked, gingerly & quickly along the edge of the pathway, as far from the cows as we could go… all of us, trying to be calm and laugh it off, but all the while still knowing we were certainly easy targets for a herd of angry, mad cows if they so choose to chase us. 

Finally, we reached the gate, opened it and scurried inside to the other side of the field – cow free at last. Thank you, sweet Lord.

So the session began … smiles, happy happy joy joy, tickles, cuddles, kisses, laughter … but the cows – angry and irritated with us – have now lined the fence along side where we were shooting the images and they were NOT impressed. Every two seconds you could hear one moo – or cry or moan or something. Not sure what it was, but they certainly were not happy and were making sounds that let us know we were not welcome to have a photo party in their field. 

“There’s the bull,” said the dad, pointing towards the biggest, tallest, meanest and scariest look cow in the bunch. “I don’t think he’s too happy …”

But I kept shooting, slightly oblivious to how loud the cows were becoming …

After after about 1/2 an hour, I realized the cows were NOT going to settle down with us there beside them, and I think it might have been scaring their little guy, Ethan, so we decided to switch fields …

.. where I had set up a delicate, summer tea party for their family …

You see, Dana is the owner of Tea Time Treats, in which she creates all sorts of delicious-ness and goodies …

… but it wasn’t long into the second part our session when we realized that we weren’t alone …

… those cows had made their way into a corrider that led straight to our field …

Did we have time for more cuddles & photos?

Nope! We decided this was our signal to depart …. as the cows sped up and approached the field, we quickly gathered up what we could … and THAT is when we realized the gate at the end of the corridor was really wide open (we weren’t sure up until that point!) and the cows most certainly  KNEW their way directly into the field where we were having our tea party …. led by the mad, glaring bull, the herd of dark cows rumbled on towards us …

“Quick, you run Ethan to the car,” I yelled to Fraser, the dad, as I frantically grabbed teacups, cupcakes and lace tabeclothes into my arms, while juggling my camera on my shoulder and a vase of fresh peonies pressed against my six month pregnant belly … Dana quickly scooped up her treats while her  older daughter grabbed what she could and ran back as fast as they could to the cars …  Amber, her darling 12 year old daughter, eyed the gate  – “They’re getting closer” she yelled ….

“QUICK, go run and close the gate before they get here!!!” Dana said, as we continued to gather up our supplies and props all while keeping an eye on how close the cows were getting …”RUN, AMBERRRRRRRRR< RUNNNNNNNNNNNNNNN!!!!!!!!!!!!!!”

In all our 12 year old speed, Amber raced to the gate with only 40 feet between her & the herd of angry bovines … but much to our dismay and her fear (poor thing!), she couldn’t get the gate unwedged from the muddy ground … “It… won’t… shut!” she yelled at the top of her lungs!

“FORGET THE GATE!!!!!!!!” I screamed back to her. “RUN!!!!!! Run for the car! RUN for your LIIIIIIIIIFE!!!!!!!!”

 

So run she did. And run we did. As fast as we could while cupcakes smushed together and a tableclothes slipped frm my arms … and then whoooosh …… a gush of water … straight down my front and onto my skirt  as I accidentally tipped the vase of peonies all over myself…. Dana turned to me …. her eyes, wide with fright and worry …
“YOUR WATER JUUUUUUUUUUUUST BROKE!!!!!!!!!” she gasped.

By this point, I couldn’t tell if I was peeing my pants with fright or laughter …. the cows are charging, her daughter is whipping across the poopy field as fast as she could, dad has slipped and fallen on a giant cow paddie taking their little guy down in the process and I was standing there, my arms full of camera, teacups, chandelier and chairs and was laughing. so. very. hard. “Not my water – the peonies spilled …!” I gasped, trying to fumble all my props back into place in my full arms and run on to exit the field.

 

And on we ran …. we jumped the rickety wooden fence and threw over the chairs and tables and landed on the other side with a HUGE sigh of relief … we were safe. Dirty. Wet. Sweaty. And laughing.

I couldn’t apologize enough to Dana and her family – cow pooh, a mad bull, herds of charging cows and endangering her daughter’s life. What kind of photographer was I?! Thankfully, Dana and her family  just laughed as hard as I was laughing and graciously wiped the cow poo off their shoes and shins and said it was no problem … they actually said … they had FUN.

 

Seriously. Best clients EVER. And one session location I will be more cautious with in the future.

Melissa Rayner I just love your tale of the mad cows.. And that family is adorable.. the eldest girl in the blue dress is naturally stunning. They are all adorable but the girl in the blue takes my breath away. And thanks again Gillian for the wonderful pictures. Amber LOL, you are a wonderful story teller! What a scary, yet funny experience.I would have been scared too. I had two cows jump a fence and run after me once. They are pretty intimidating up close and personal. The photos are so worth it though! Beautiful as always :)!

Sherri LOL, no really, LOL! Been there. Found out later that cows are EXTREMELY curious of humans, particularly as they are used to being fed and milked by them… both of which feel great to them, so they will look and snort and call to get your attention, and come get you if they can figure out how to get to you. But to the naked eye it does look as if they are upset and want to get you. Glad your clients enjoyed it. A definite country adventure to remember. Thanks for sharing.

Let it All Go …

Today is Monday. The day I tackle laundry, baking, dinner menu planning, grocery shopping – basically everything for the week. The day that set ups how smooth the week will go for me. 

But today, I decided to scout out new locations for my session. And then I cleaned out half of the kitchen cupboards and scrubbed them down. Two garbage bags later (!), half of the cupboards are gloriously clean & organised. However, grocery shopping didn’t happen and I didn’t menu plan for the week. And this got me wondering as I folded my second load of clean laundry (thank you, laundry line!) while the cookies baked away in the oven …. will I *ever* get on top of it all? I could go from room to room to room throughout this entire house of mine and clean constantly. It’s not always dirty, but untidy … kids … you know how it goes … so how does one get on top of it all? For a moment – okay, for five minutes or so (half the day?) – I felt completely defeated. And then I started to think about October – four months away – when baby #4 joins us. How will I *ever* get it all done then? Will I be swallowed by laundry piles of dirty clothes and the rush around of schedules for the new school year? 

I came to the conclusion that I can’t do it all.

I can’t keep the house clean *all* the time. I can’t always menu plan the week out. Sometimes, grocery shopping will have to be done at midnight. And I definitely will have a basket or two of folded laundry that will need to be put away on a weekly basis. (Okay, who’s kidding who? On a daily basis.)

 

But that’s okay … cuz’ that means I can sit outside on the back porch with the girls in the afternoon and watch Lacey colour her newest artwork … or watch Lyla dance around in her underwear (does that girl wear clothes in the summer? I would like to know!) or cuddle Lucia when she’s ready for her nap.

There will always be something to do around here. But there will not always be little kids. I am honestly reminded of this quite often (even though the daily grind of life sometimes fades this feeling) because of my husband’s job. This weekend, someone lost their father. Children were without their dad for Father’s day. And a mother was without her child. 

When I think of things like that – smudged mirrors and handprints on the back porch door seem to matter less. I just have to remind myself of this and I will realize what really is important …

Yesterday, Abby had to work at the funeral home so I took the girls to a Faery Festival … and the laundry, the chores, the to-do list waited. 

Because it can.

And now, we’re going to eat some yummy cookies. Because we can. And because the laundry (albeit clean) can wait to be put away until bedtime tonight.

P.S. These are the coveted Redneck Cookies, introduced to me by Groceries to Go. Quite a few of you have e-mailed asking for a link to the recipe since I didn’t post it last time. So, here you go. Go bake and then sit with your kids and snack away the afternoon. 

 

Yummy Redneck Cookies

 

2 cups – Quick Oats
2 cups – White Flour
1 tsp – Baking Powder
1 tsp – Baking Soda
1/2 tsp – Salt
Mix All Together and Set Aside
In Seperate Bowl Beat with Electric Mixer Until Fluffy:
1 cup – Butter, Room Temperature
1 cup – Brown Sugar
1/4 cup – White Sugar
2 Tbsp – Corn Syrup
2 tsp – Vanilla
Beat In:
2 Eggs
Mix Wet Ingredients with Dry Ingredients
Fold In:
1 cup – Chocolate Chips
1 cup – White Chocolate Chips
1 cup – Chopped Pecans or Walnuts

 

350 degrees for 10 minutes.

Tabitha LOL, I love Lucia’s serious little face, even when she is having faery fun!!! And the face painting fabulous!! (I love Lyla’s butterfly!). And…it’s hard sometimes to prioritize what needs to be done (because it all needs to be done!), but I am very lucky – I have a great Mom who always reminds the kids are little, and the laundry/toys/windows, etc, can wait. Congrats to you for working to find your balance!
